Italian Meat Roll

2 lbs. lean ground beef or 1 ½ lbs. ground beef and ½ lb. ground pork 6 – 8 slices of ham 6 oz. (1 ½ c.) shredded Mozzarella cheese 3 slices Mozzarella (optional) 2 beaten eggs 2 slices of bread (soak bread in water and squeeze dry) ½ c. ketchup 2 T. snipped parsley (optional) ½ t. oregano ¼ t. salt ¼ t. pepper 1 minced garlic clove 1 small onion, chopped 1 pinch of cayenne (optional)
Combine eggs, ketchup, parsley, oregano, salt, pepper, garlic, onion, and cayenne in a bowl. Crumble the bread in to mixture and add meat. Mix well. On waxed paper pat meat to a 12x10 inch rectangle. Arrange ham slices on top of meat, leaving a small margin around the edges. Sprinkle the shredded cheese over the ham. Starting from the short end, carefully roll up the meat using the waxed paper to lift. Seal the edges and ends. Place seam side down in a baking dish. Bake at 350 degrees for one hour. Center of meat will be pink due to ham. If desired, place cheese slices over top of meat and return to oven until cheese melts. (Do not cover meat.)
I also use a spinach filling. You can substitute the spinach for the ham or follow the instructions for the spinach stuffed steak recipe.
