Italian Beef

4 lbs. top of round or sirloin beef roast
4-5 whole garlic cloves
Salt, Pepper, Oregano, Red Pepper
Make slits on top of beef and insert garlic. Season with salt, pepper, oregano and red pepper. Add a little water in the pan. Do not cover. Bake at 350 degrees for 1 ½ - 2 hours. Keep adding a little water to make the au jus.
I cook it so the center of the meat is still red. I slice it thin or take it to the butcher and have them slice it for me. Warm up the au jus. To warm up before serving and to cook it a little more, put it in the au jus for about a minute. This way your beef will not be tough. Put the warm beef on some nice Italian buns and add some nice fried green peppers.
