Meatball Zuppa (Soup)

1 lb. ground meat
1 soup bone or beef bouillon cubes
1 egg
2 T. parsley
1 T. garlic powder
1/3 c. grated imported Romano cheese
1 t. dried or fresh basil, chopped
8-10 c. water
4 tomatoes
1 celery stalk, chopped
1 carrot, sliced
1 small onion, chopped
Add whatever veggies you want – corn, zucchini, potatoes, etc.
Salt & Pepper to taste
Pinch of red pepper




Mix meat with egg, 1 tablespoon of parsley, garlic, basil, salt & pepper. Make small meatballs. Heat some oil and brown the meatballs. Do not cook all the way. In stock pot add water, veggies, tomatoes, meatballs and seasoning. Simmer on medium heat until veggies are cooked. Add ditalini or break up pasta if you like.
