Spinach Stuffed Steak

1 pkg. frozen chopped spinach, thawed and drained
7 oz. jar of roasted red peppers, drained
1 egg white
½ c. seasoned breadcrumbs
¼ c. imported Romano or Parmesan cheese
1-2 garlic cloves, minced
Salt & pepper to taste
1 flank, round or sirloin steak (about 1 ½ lbs.)
Combine the first eight ingredients. Mix well. Cut steak horizontally from a long edge to within ½ inch of the opposite edge. Open like a book. Spread spinach mixture over the steak to within 1 inch of the edges. Roll up jellyroll style starting with the long side. Tie with heavy thread or string. Place meat in baking dish and rub with oil. Cover and bake at 350 degrees for 1 hour. Uncover and bake about 30 minutes or until tender. To serve cut into ½ inch slices. You can also wrap the meat in foil tightly for about 1½ hours or until done. If you use round or sirloin steak, slice it thin.
