Red Velvet Cake

Red Velvet Cake
Cake:
3 Tbs. Cocoa
2 oz. red food coloring
1 ½ c. sugar
½ c. shortening
2 eggs
2 ¼ c. flour
¾ tsp. salt
1 c. buttermilk
1 tsp. vanilla
1 tsp. baking soda
1 tsp. vinegar
Frosting:
½ c. flour
1 ½ c. milk
1 c. butter
1 c. sugar
1 tsp. vanilla
Cake:
Grease and flour two 9-inch round baking pans. Make a paste of the cocoa and food coloring. Cream sugar and shortening. Add eggs, one at a time and beat in between each addition. Add cocoa paste. Sift together flour and salt. Add alternately with buttermilk. Add vanilla. Add vinegar and baking soda. Beat after each addition. Pour batter evenly into prepared pans. Bake at 350 degrees for 25-30 minutes or until toothpick inserted in center comes out clean. Cool.
Frosting:
Mix flour and milk. Boil until thick. Cool. Beat at high speed until fluffy. Cream butter, sugar, and vanilla. Add cooled milk/flour mixture. Beat. For a festive look, add food coloring of your choice, depending on your theme.
