Grandma's Hummingbird Cake

Grandma's Hummingbird Cake
3 c. self-rising flour
2 c. sugar
1 tsp. baking soda
4 large eggs
1 c. chopped pecans
1 tsp. cinnamon
¾ c. vegetable oil
1 ½ tsp. vanilla
8 oz. can of crushed pineapple (save the juice)
2 c. bananas (3-4 mashed)
Preheat oven to 350 degrees. Grease and flour three 8-inch round pans. In a large bowl combine all of the ingredients and blend well. Divide the batter into the pans. Bake for 25-30 minutes. Check once during baking and turn pans to bake evenly. Use toothpick to check for doneness. Let cake layers cool completely before frosting. Frost with

This was my Grandmother’s Sunday cake, which her pastor loved. I remember many times when Pastor was at Grandma’s for Sunday dinner. She frosted this cake with cream cheese frosting and toasted coconut. It was wonderful. I have added a touch of my own to grandma’s cake. It is dried pineapple flowers. It adds a pretty touch. Enjoy!
