Grandma's Carrot Cake

Grandma's Carrot Cake
4 large eggs (at room temp)
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
2 tsp. baking powder
½ tsp. salt
3 c. grated carrots
1 c. chopped pecans
2 tsp. cinnamon or ¼ tsp. of each – nutmeg, allspice, and cinnamon
Preheat oven to 350 degrees. Grease and flour a 9x13 inch pan. In a large bowl beat eggs. (It makes a difference.) Add sugar and vanilla. Add flour one cup at a time. Add baking soda and baking powder. Add salt and spices. Fold in carrots and pecans. Blend well. Pour mixture into baking pan. Bake for 30 minutes. Cool.
Frost with
cream cheese frosting
.
Sprinkle top of frosting with green coconut flakes and jellybeans and you have an Easter basket! It is also very good plain. Good with coffee or tea.
