Lamingtons (Sponge Cake)

Sponge Cake:
1 ¼ c. flour (all purpose)
6 eggs
3 ¾ c. castor sugar (super fine)
60g (2oz) butter, melted
Lamingtons:
3 c. powdered sugar
¾ c. cocoa powder
⅓
c. boiling water
⅓ c. melted butter
Coconut flakes
Sponge cake:
Preheat oven to 180°C (350°F). Sift the flour three times. Set aside. Place the eggs and sugar in the bowl of an electric mixer and beat for 8-10 minutes or until thick and pale and tripled in volume. Sift the flour over the egg and sugar mixture and gently fold through. Fold in the butter. Grease two shallow 20 cm (8in) square pans. Line the bases with non-stick baking paper. Pour 1/2 the mixture into each tin and bake for 25 minutes or until the cakes are springy to touch and come away from the sides of the tin. Cool on wire racks.
Lamingtons:
Cut cake into 2 ½ inch squares. Sift together powdered sugar and cocoa powder. Mix with boiling water and melted butter. Toss the sponge squares in the chocolate icing and then in coconut flakes. Allow to set on a wire rack.
